Joyful Cooking - Pizza Casserole

Hello Fellow Thrifters and Friends,

   Mr Joyful Thrifter loves pizza. Actually that is  bit of an understatement I think he would eat it every day if he could. I like pizza but not quite as much as him. I like to come up with creative ideas to serve him his favorite food that does not always involve making an actual pizza.

I found the following recipe from Live Better America and I knew he would enjoy it.



Ingredients

8
ounces uncooked wheel-shaped macaroni (about 3 1/2 cups)

pound lean turkey Italian sausage, casings removed

oz fresh mushrooms, sliced (3 cups)
1
jar (25.5 oz) Muir Glen® organic garden vegetable pasta sauce
1/2
cup shredded fat-free or part-skim mozzarella cheese (2 ounces)
1/4
cup sliced ripe olives

(We also added half a bell pepper and pepperoni)
  • Step 1

    Heat oven to 350º. Cook macaroni as directed on package, omitting salt; drain.
  • Step 2

    Meanwhile, in nonstick skillet, cook sausage and mushrooms over medium-high heat 6 to 8 minutes, stirring frequently, until sausage is no longer pink; drain. Mix macaroni, sausage mixture and pasta sauce in 2 1/2-quart casserole.
  • Step 3


    Before baking the pasta we added our extra ingredients

    Cover and bake about 30 minutes or until hot. Sprinkle with cheese and olives. Let stand about 5 minutes or until cheese is melted.Lets just say we enjoyed the meal

  1. Thank you for sharing this recipe, it looks yummy and has given me and idea for dinner tonight when I was wondering what to make when I need to go shopping and the cupboard is looking a bit bare!
