Joyful Cooking - Vegan Open Faced Bagel

Hello Fellow Thrifters and Friends,

  During our anniversary weekend in San Diego Mr Joyful Thrifter and I found a wonderful cafe called "To the Point - Cafe and Eatery" It had the perfect vibe and atmosphere we were looking for to enjoy a quiet breakfast in our just got out of bed outfits.


I ordered a vegan open faced bagel and Mr Joyful Thrifter ordered the special of the day "tot-chos"which is nachos made with Tator Tots salsa and a bunch of other goodness.  The food food was so amazing that we decided to re-create it at home.



Ingredients:

Bagels - we used whole wheat
Hummus
Cucumber
Tomato
Avocado
Fresh Basil
Sprouts

Directions:

-Toast bagel
- cover both sides of the bagel with hummus. (We used a garlic flavored hummus that added an extra level of flavor)
-Top with vegetables in your favorite order
-ENJOY!


This meal is a really easy quick one to make, and you feel really satisfied when you are finished. Have you made any new meals lately?

  1. That looks really good and easy. I was at an organic vegan food truck last night for dinner and had potato tacos-they were made of cubed potatoes, chickpeas, spinach and a little garlic in a corn tortilla. Really good! I'm going to re-create them at home too!
